Snackademy RATIONALE

Chickpeas are a great source of fibre to feed beneficial bacteria. Beetroot also acts as a prebiotic to feed the beneficial bacteria and is a great source of antioxidants.

INGREDIENTS

  • 1 beetroot, roasted and peeled (or your can use prepackaged beetroots)
  • 1 can (400g) chickpeas,drained and rinsed
  • 4 tbsp tahini
  • 2 tbsp extra virgin olive oil
  • 1 lemon
  • 1 garlic clove, minced
  • Salt, to taste
  • Water, as needed for consistency

INSTRUCTIONS

1. If not using pre-cooked beetroot, cut the beetroot and roast in a preheated oven at 200°C (400°F) for about 30 minutes, or until tender. Allow it to cool.

2. In a food processor, combine the beetroot, chickpeas, tahini, olive oil, lemon
juice (start off with half lemon juice), salt and minced garlic.

3. Blend until the mixture is smooth. If it's too thick, add water a tablespoon at a time
until you reach your desired consistency.

4. Add salt to taste, transfer the yum-mus to a serving bowl, drizzle with a bit more olive oil, and sprinkle with additional spices or fresh herbs if desired. Serve with fresh vegetables.
