Snackademy RATIONALE

Oat flour is high in fibre compared with white flour and can help to support the microbiome. Courgette is high in fibre and nutrients to support beneficial bacteria.
Dark chocolate is high in magnesium and antioxidants, which support gut health.

INGREDIENTS

  • 200g oat flour
  • 1 tsp baking powder
  • 1 tsp bicarb
  • 1 tsp cinnamon
  • Pinch of salt
  • Approx 120g courgette (1 mediumcourgette grated finely no need to
    squeeze out the moisture)
  • 50g coconut sugar
  • 60ml maple syrup
  • 2 eggs
  • 60ml olive oil
  • 3 tbsp milk
  • 1 tsp vanilla extract
  • 50g dark chocolate chips

INSTRUCTIONS

1. Add the dry ingredients to a bowl and mix together including the chocolate
chips.

2. In a bowl add the egg, courgette, olive oil, milk, maple syrup and vanilla extract
and mix together.

3. Pour the wet ingredients into the dry ingredients and gently fold in (trying to
only fold 10 times to avoid over mixing which can result in a dense muffin).

4. Spoon into muffin moulds and then place in the oven at 170°C for approx. 20
minutes or until a skewer inserted comes out clean and allow to cool and enjoy.
