Snackademy RATIONALE
Slightly green bananas contain more resistant starch, a type of prebiotic carbohydrate that reaches the large intestine where it can be fermented by beneficial gut bacteria to support the microbiome.
Dark chocolate provides polyphenols that support beneficial bacteria, while nuts and seeds add fibre, healthy fats, and minerals to support gut bacteria . Raspberries contribute even more fibre and polyphenols, and goji berries add antioxidant compounds.
INGREDIENTS
- 3 bananas (best if they are not ripe and soft, so a little yellow/green)
- 6 popsicle sticks
- 50g dark chocolate
- 1 tsp coconut oil or tahini
- Toppings of your choice - granola, freeze dried raspberries, goji berries, peanut butter, nuts and seeds
INSTRUCTIONS
- Melt the dark chocolate, add either coconut oil or tahini and mix well
- Cut the bananas in half and dip each one in the dark chocolate
- Sprinkle your favourite toppings over the dark chocolate while it is still melted and pop onto parchment paper on a tray, and into the fridge to firm up
- After one hour (maybe less) the chocolate and toppings will be set and they will be cold and ready to enjoy
