Sweet potato provides fibre to feed the microbiome, complex carbohydrates and carotenoids, and the toppings introduce different sources of protein, healthy fats, fruit and plant diversity.
Hummus + vegetables: Chickpeas provide fibre and plant protein, the vegetables add further fibre and polyphenols.
Cottage cheese + pear + walnuts + Manuka honey: Cottage cheese provides protein and calcium, pear contributes fibre, walnuts provide healthy fats and plant compounds that support the gut microbiome.
Peanut butter + banana + blueberries: A combination of healthy fats, protein, fruit and fibre, blueberries and bananas also provide a variety of plant compounds for the gut microbiome.
INGREDIENTS
- 2 medium sweet potatoes
- Yogurt or cottage cheese
A selection of:
- Banana
- Blueberries
- Peanut butter or almond butter
- Hummus
- Cucumber
- Feta
- Pomegranate seeds
- Pear
- Walnuts
- Avocado
- Other toppings of your choice
INSTRUCTIONS
- Cut the sweet potatoes into slices approximately 1/2cm each (not too thick to ensure they toast)
- Place into the toaster and toast for around 6 minutes

Once cooked remove from the toaster and place onto a tray and top with your favourite toppings. Try the following combinations:

Hummus and avocado, or hummus, cucumber and pomegranate seeds and feta

Cottage cheese, pear, drizzle of raw Manuka honey and walnuts
